Nothing is quite as it seems with Guava Gelée Stone, a spectacular dessert created by Chef Rubén Cervantes. This Masterdish takes you through a culinary journey to Talpa de Allende, a local village in Jalisco known for its guava candies. Inspired by local flavours and landscape, this beautiful dish offers a contrast of textures and flavours that reveals itself with every bite. Mimicking the village’s stone-paved road with a guava mousse and gelée “stone”, Cervantes nods to the nearby Oyamel forest using a live-edge wood plate to serve the famed dessert. With each bite, diners will enjoy an array of flavours and textures, eventually uncovering a rosemary and orange center. Topped with chocolate ribbons and dust as well as basil powder and sprigs, it’s the ideal blend of creamy and sour, delicately balanced by rosemary perfume.
